When To Freeze Sweet Corn

We encourage customers to freeze sweet corn to enjoy in the off-season.



We recommend freezing corn between approximately July 20 and August 20 because:

  • Early locally-grown sweet corn is typically covered with plastic at planting to help heat the soil and start the growing process. This works well but adds to the cost of production - which increases the purchase price.
  • Early sweet corn varieties have shorter cobs and less kernels and will not yield as much (when cut off the cob) as longer-eared, full-season varieties.
  • Later in the season, corn can become less available and more expensive.
